Break out the bread

A single loaf of handcrafted bread inspires grandiose passions among those who understand the intrinsic appeal of flour, water, salt and yeast.

The late James Beard, one of the most prominent names in American cuisine, said it best: "Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of all feasts."

Julia Child, the late TV chef and blunt ambassador for fresh foods, followed with, "How can a nation be great if its bread tastes like Kleenex?"

These two food legends are talking about artisan breads, not the factory breads that line grocery aisles. Only crusty, chewy breads baked by kitchen artists possess the power to inspire culinary passions and turn a bowl of soup into a meal of note.

At BLUNUVO we believe that a meal is only as good as the loaf of bread it’s served with, and for that reason we have partnered with one of Atlanta’s top artisan bakery – Tehva Bakery, that specializes in gourmet European breads, and together developed wonderful breads like foccacia and ciabatta.

All of our great sandwiches are made on artisan bread that are baked at Tehva bakery in Buckhead, which also bakes the selection of dinner rolls that accompanies our meals – from the extra healthy multigrain bun to delicious sun-dried tomatoes roll.

Artisan breads fill another, less celebrated role: They provide the foundation for quick-and-easy party fare, or a light meal. Instead of an accompaniment, bread becomes a star ingredient. Simply match toppings to the sweet, mild or pungent breads, and in less time than it takes to chill a bottle of wine, you can be passing the hors d'oeuvre tray. The baker has done the hard work, with the home cook simply turning bread slices into surefire crowd pleasers.

A classic baguette that graces a bowl of pasta at dinner, for example, becomes an appetizer when paired with smoked salmon, Brie and a handful of flavorings. Or, as we serve in our menu, top a rustic loaf of ciabatta with fresh mozzarella, sliced wine ripe tomatoes and fresh basil for a wonderful Caprese Sandwich.

A walnut-raisin loaf can be transformed into a festive first course with blue cheese, pomegranate seeds and toasted walnuts.

Bread is part of our DNA, a legacy of civilization and part and parcel of our being. It is a foundation food that is enjoying resurgence and is becoming more than just something for sandwiches. Like wine, people are realizing that you must pair bread and flavors.

Europeans have enjoyed artisan breads for eons, and Americans who finally recovered from their misguided low- carb mania are following suit. Unlike uniform, rectangular breads with soft crumbs and crust, artisan breads are made by hand, in small batches. Artisan breads also can contain whole grains, fresh herbs, fruits, nuts and honey.
